But then again, cooking isn’t always about creating a magnum opus on the first try. It’s about experimenting, fine-tuning, and above all, having a blast.

Imagine sifting flour and melting butter to the tempo of jazz or stir-frying veggies as electric guitars wail in the background. The genre doesn’t matter; it’s the energy that it infuses into the cooking process. Your playlist could be as varied as your spice cabinet, from Johnny Cash to Cardi B.
I remember a time in college when a group of us got together to make a homemade pizza. No one really knew what they were doing. The dough was stickier than a teenager’s love note, and our choice of toppings was guided by youthful indiscretion more than culinary wisdom. But we had The Beatles on vinyl, and not a worry in the world. That pizza may have been a mess, but it was our mess. And to this day, it’s one of my fondest memories.

- Boil the Pasta: Fill a large pot with water and bring it to a boil. Add a generous pinch of salt. Add the spaghetti and cook until al dente, as per the package instructions.
- Prepare the Meat: While the pasta is boiling, heat a skillet over medium heat. Add the diced guanciale or pancetta and cook until it becomes crispy. Remove the meat from the skillet, reserving the fat.
- Make the Sauce: In a bowl, whisk together the eggs, Pecorino Romano, and Parmesan cheese. Add a good amount of freshly ground black pepper to the mixture and whisk again.
- Combine: Drain the pasta, reserving a cup of pasta water. Add the hot pasta to the skillet with the reserved meat fat. Toss well to coat the pasta in the fat.
- Mix in the Egg Mixture: Remove the skillet from the heat. Quickly add the egg and cheese mixture, stirring rapidly to create a creamy sauce that coats the pasta. If the sauce seems too thick, add a little reserved pasta water to reach your desired consistency.
- Add the Meat: Mix in the crispy guanciale or pancetta.
- Garnish: For an optional touch of color and freshness, sprinkle finely chopped flat-leaf parsley over the dish.
- Serve: Divide the spaghetti carbonara between plates, sprinkle with additional Pecorino Romano or Parmesan cheese, and offer more black pepper for those who wish.
