Global Harmony Hotpot Recipe

Introduction

Inspired by our “Food through Time: A Culinary Odyssey” episode focused on chilies, this Global Harmony Hotpot brings together the world on your plate. It’s a collaborative effort featuring the unique culinary expertise of our amazing panelists: Vivian Thompson, Elle Thyme, Chef HistorEats, Seb Greenfield, and Ollie Thorne.

Serves: 4-6

Ingredients

Broth

  • 1 tbsp olive oil (Seb’s eco-friendly choice)
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 1 Thai chili (Elle’s favorite for its cultural depth)
  • 1 Ancho chili (Vivian’s pick for its smoky flavor)
  • 1 liter vegetable broth
  • Salt to taste

Main Ingredients

  • 200g tofu, cubed (Ollie’s tech-inspired meat alternative)
  • 200g sustainable shrimp (Elle’s pescetarian touch)
  • 200g seasonal vegetables (Seb’s sustainable selection)
  • 2 potatoes, diced (Chef HistorEats’ nod to ancient civilizations)

Garnish

  • Cilantro leaves
  • Lemon wedges

Instructions

Prepare the Broth

  1. Heat olive oil in a large pot over medium heat.
  2. Add minced garlic and sliced onion, sauté until translucent.
  3. Add Thai and Ancho chilies, sauté for another 2 minutes.
  4. Pour in vegetable broth and bring it to a boil.
  5. Reduce heat and simmer for 20 minutes, allowing the flavors to meld.

Prepare Main Ingredients

  1. While the broth is simmering, prepare the tofu by pressing out excess water and cutting it into cubes.
  2. Peel and devein the shrimp.
  3. Wash and chop the seasonal vegetables.
  4. Peel and dice the potatoes.

Assemble the Hotpot

  1. After the broth has simmered for 20 minutes, strain it to remove the chilies, garlic, and onion. Return the clear broth to the pot.
  2. Add the cubed tofu, sustainable shrimp, seasonal vegetables, and diced potatoes to the broth.
  3. Bring the hotpot back to a gentle boil and cook until all ingredients are tender, about 20-30 minutes.

Serve

  1. Ladle the hotpot into individual bowls.
  2. Garnish with fresh cilantro leaves and a wedge of lemon on the side.
